I saw this radio on eBay. Says for Bronco but as you know it will fit the 61-66 Ford trucks as well. White knob inserts are available from Retro sound so I assume you could specify the correct knobs when ordering. It looks like a great choice for the stock openings and gives modern features.

That radio shown on the link is used when the dash is already hacked out. He has another listing that does not have the black adapter behind it and mounts using all the original radio holes. Either listing is for the same radio. Looks pretty neat to me.

Another poster (therealjoeshmoe) also points to this same radio. Great minds think alike, his mind is just faster than mine!

Found two different listings, one has led face (me no like), the other has conventional appearing faceplate, but is set up for bluetooth, ipod, etc
