Tire and wheel size

I need some advice.
I am looking at keeping the original rims and tires as an option on my 66.
I would also like to put a set of chrome wheels on at times. Looking for any advice from guys that have custom wheels as to what size tires and wheels work best. I do not have power steering, is there a concern about being able to turn with wider tires. Any info is appreciated.
